I really like the Chinese one string instrument, the Erhu. If you want something haunting, or sad, or reflective, or creepy, or even ethnic, it fits the bill. -

I've always been a fan of the waterphone. I have to agree it's not a beautiful sounding instrument, but it's very effective! Davis makes great use of it in The Matrix, for example.Cookie monster -

How about chairs as percussion in The Missing?

Taikos overrated?? Never.
I love the hammer-on-iron sound for Isengard in the Lord of the Rings. Very effective.
I have many scores that could be labelled 'ethnic' (or if it wasn't film music as 'world music' ) and I just love all of the instruments. And although the duduk is highly overused I still love the sound of it. I like percussion, flutes, you name it.
Maybe it is easier for me to say the instrument that I don't like, which is the saxophone for instance. Almost makes me nauseous. -

I think the theremin has made the greatest impact on film music. The other instruments are fine but limited.listen to more classical music!
