There's a bit too much going on in Jim's cover this time for me. I much prefer the previous cover.

I too don't like crowded film posters (score covers). I always prefered the teaser posters of the original SW saga to the collage like main posters. The teaser posters leave so much more to the imagination. A prime example for what I mean is the poster for "Alien" that shows nothing but the egg and the tagline.

Yeah, I agree with this. I much prefer a logo or concept of some kind to just staring at a group of faces. -

Are you guys putting down brilliant artist like Drew Struzen? His Star Wars posters are nothing short of brilliant. Special Edition posters > all other Star Wars posters.

I'm certainly not saying that all collage approaches are bad. Far from it! Drew Struzan's work, as you say, is amazing. But that's hand-drawn, which makes a difference, and he usually includes things that aren't just actors as well. What I specifically don't like is a bunch of floating-head photos of the three or four main leads.
Signs, which as you know I'm listening to right now, has a gorgeous cover BTW. -
