    However that negates two things:
    1) taste & enjoyability: food for man is SO much more than just nutrition: it's a social and aesthetic event
    2) we're on the bloody top of the food chain so we can pretty much do what we want

Exactly. But that can go both ways really. We have the ability to choose not to eat meat, i.e. we have morals. I obviously have nothing against eating meat, but I understand and accept the reasons why people don't. Killing an animal is not a pretty thing, and if there was some Star Trek-like way to obtain meat without killing the animal, I'd be all for it!

Thing is, Demetris is right. Meats contain absolutely essential ingredients to human physical wellfare.
And so is Steven. There are alternative ways of ingesting those ingredients.

Your difference of opinion hinges on the confusion of "essential" with "irreplaceable".

Yes, but the way Demetris forwards his opinion is extremely irritating. He should start off with facts rather than blurt out a knee-jerk reaction.

That was actually a whole chapter in the aforementioned Bourdain book: he loves to work with meat, but had never actually attended a slaughter.

So he went to Portugal to attend a farmyard killing of a fattened pig (and I'm talking those mean, BIG porkers there...not your cute piggybank Disney porklets), and the whole ceremony and feast surrounding it.
It didn't put him off meat at all, but it did imbue him with some serious respect, and a vow to be as "grateful" (for want of a better word) as he could, by not wasting anything of the life taken.

At the end of the day it's all about respect.
And i think you can show that in different ways: not only by abstaining from killing an animal (or participating in that industry), but also by being very aware of what you're doing and making sure you make the very best of it.

Anyway, if you want to be informed a little more than your own opinion which you formed inside your own house, then you might want to ask someone who's specialized. I am not, but i have talked with such persons in the past due to some problems i had.

Oh for god sake Demetris. You said "White and Red meat are essential to one's good health." I'm disagreeing with that because I have not only read this is not true, I've seen the proof this is not the case. Perhaps if you do a little research, you'll find that meat is not essential to a healthy diet.

So please don't accuse me of an opinion 'formed inside my own house' just because I don't agree with you. Next time please learn the facts before you go ahead and make an argument.

Pf. It's the same thing you did accusing me of ignorance because i don't agree with you or your parents' strategies, ISN'T IT?

Reading a couple of books or observing what your parents do, doesn't make you a specialist on the area, so how do you claim superiority in this one? I never claimed to be the mastermind of foods and nutrition while you seem to forget we are 2 film score dudes discussing food for God's sake, it's not our job.

I tell you i had some problems which were directly linked to my nutrition at the time, and i'm just passing you what the people i went to told me. It's not my job to tell you why it's good and why it's not but just because your parents are doing it that renders everyone else - including professionals, wrong? Jeez.

If you don't want to take pills and sick stuff like that to balance what you're not taking from a strictly green nutrition, then you have to maintain balance, as in taking in the right amounts of fruits, vegetables, fish, white meat (as in chicken, rabbits etc) and red meat. As simple as that. I am sure people who do otherwise will have lots of arguments on their behalf, that alone doesn't make them necessary CORRECT.

Anyway enough with this bs, i am HUNGRY now and it's your fault buddy! kill

It would certainly be a good thing if every meat-eater had the option to either see a slaughter or commit the killing themselves. It's all too easy to become unattached to the truth of the matter when you see meat all nicely packaged in plastic.

My grandparents have geese in their back garden that they breed for food, so I've seen the slaughter of my own food at least. Perhaps I will actually do the killing next time? (Though I've been saying this for a very long time now...)

    But they have.
It's the easiest thing in the world to visit a farm, or even a meat "factory".

I guess that the better part of the population though doesn't look upon this as any sort of socially acceptable entertainment, though, and therefore declines the option. And I can't blame 'em.
    It's messy and uncomfortable.

I would disagree with the option of killing, though.
This is an extremely delicate process best left to those who really know what they're doing.
God, the idea of a blood-thirsty (or worse: hesitant) amateur trying to slaughter a calf or a pig is rather faintmaking. slant

No, it's not. You're not just disagreeing with me, you're disagreeing with fact.

I never claimed to be the mastermind of foods and nutrition while you seem to forget we are 2 film score dudes discussing food for God's sake, it's not our job.

I'm not saying I'm a specialist in the area, I'm just saying you are wrong to say meat is essential to a healthy diet. That's my whole point here.

I tell you i had some problems which were directly linked to my nutrition at the time, and i'm just passing you what the people i went to told me. It's not my job to tell you why it's good and why it's not but just because your parents are doing it that renders everyone else - including professionals, wrong? Jeez.

You're unnecessarily confusing matters to back up your point. I never accused 'professionals of being wrong', I'm accusing you of being wrong. I'm saying your 'meat is essential for a healthy diet' reply is wrong. (Though I am not saying meat does not have essential ingredients.)

You're still showing an extreme amount of ignorance to vegetarianism. For example, my parents have NEVER said that their non-meat diet is less or more healthy than my meat diet, they've never 'preached' to me and I have nothing but the utmost respect because of this. They know perfectly well the benefits of meat just as I know the benefits of non-meat foods.

The reason they don't eat meat is because they themselves are opposed to killing animals. That, IMO, is quite a respectable moral to behold, even though I eat and enjoy meat myself.

I'm simply offended by your attitude towards the whole thing and the ignorance you have shown.

Seems like every week you open a magazine, watch a documentary or read an article the very same things that used to cause cancer a year ago are now essential and vice versa.

The sad thing in this is that the most important message you could give: all things in moderation (the ancient Greeks already knew this, dammit angry ) is being snowed under by a plethora of detailed information no one is able to keep track of.

By the way, some people are vegetarians because they don't like meat.

They apparently bring out the killer instinct in chefs (a pretty hunter/neanderthal/testosterone-driven class of people to begin with, apparently wink ) :

"Vegetarians, and their Hezbollah-like splinter faction, the vegans, are a persistent irritant to any chef worth a damn.

To me, life without veal stock, pork fat, sausage, organ meat, demi-glace, or even stinky cheese is a life not worth living. Vegetarians are the enemy of everything good and decent in the human spirit, and an affront to all I stand for, the pure enjoyment of food.

The body, these waterheads imagine, is a temple that should not be polluted by animal protein. It's healthier, they insist, though every vegetarian waiter I've worked with is brought down by any rumor of a cold. Oh, I'll accommodate them, I'll rummage around for something to feed them, for a 'vegetarian plate', if called on to do so.
Fourteen dollars for a few slices of grilled eggplant and zucchini suits my food cost fine."

A couple if my friends are also vegetarian, and I've never known them to take the moral high ground with it. Generally, at least in my experience, a vegetarian does not believe him or her to either right or wrong, it's just a personal preference rather than "belief". My parents have nothing against me eating meat, they were the ones who introduced me to it in the first place! biggrin
